Kale: My own personal superfood.
I've decided to start a dedication post to each of my favorite foods. Although I hope to generate more traffic to my blog, I am actually just genuinely excited to have a place to store my knowledge! Alright, enough...Time to start talking food....
This is dedicated to one of the most nutritionally rich greens available, otherwise known as kale. I have many conversations about one of my personal superfoods, especially when I bring it to lunch (which happens almost everyday)
Pretty routinely, people will walk by, gawk, then ask "what is that dark green curly looking stuff"?
My favorite response was: "Oh, kale? I use that as a garnish for buffets'"
....sigh.
Thats usually my response as I am deeply disturbed that not everyone is educated on the health benefits of my wonderful kale. Ahh, Fear no more! I have come to enlighten those who may not yet know.
Tagged as one of the healthiest foods, kale is very nutritionally dense. It is brimming with vitamins and minerals. Below are some of the great health benefits you receive by just eating one cup of kale!
Calcium- Did you know that kale contains more calcium than milk??! Its no wonder that the USA still has a high rate of calcium deficiencies.
Iron- Vegetarians rejoice! We now have a great source of iron, fear anemia no more! Truth- I have higher iron levels than most meat-eaters. It was proven at a blood drive.
Fiber- As if I don't get enough fiber in my diet the way it is. =)
Our immune system must be kept in tip top shape due to superbugs, and antibiotic resistant infections, most of which result from horrific factory farm conditions (not even going to start discussing that).
.......What better way to jumpstart your immune system than adding kale to your diet a few times per week. Kale contains some wonderful flavanoids, antioxidants, and carotenoids beneficial and crucial to a healthy immune system.
What do I think the best part about kale is? That I can get a bunch of organic kale for $1.25 at my grocery store. That means, you are giving your body seemingly endless vitamins and minerals for a few cents a serving! Talk about superfood!

A vinaigrette to help ward off colds!
Welcome! I am now just getting back into the groove, since a mess of a bronchial cold knocked me on my bottom for the past week. I've decided to share with you a great secret of mine (more like holistic nutrition common sense) that will jump start your immune system. By consuming this immune boosting vinaigrette, your body should be working at its peak, and will thank you by remaining healthy during cold and flu season!
Immune Booster Vinaigrette:
2 big cloves of raw garlic
1-2 tbsp. of raw apple cider vinegar
1-2 tbsp. of raw honey*
2 tsp. of organic olive oil
Combine the first three ingredients in a food processor for 15 seconds, then stream in the olive oil, while pulsing.
*Raw honey has some insane natural healing properties that you don't receive from cooked honey, since the live enzymes are lost when heated.
The way I eat it: I prefer dousing all of this dressing on a beautiful bed of raw organic kale & parsley. Sometimes, I 'll even add organic red raspberries and walnuts for a true flavor explosion. Kaaaaboooom!!!!!!
